Helped my cousin to make these cards for the teachers in her school. Actually she had asked me to google for nice wordings to be pasted on the teacher's day card she intended to do. I ended up helping her do the card instead of looking for the wordings! Hahaha... It was fun making the cards for you kak... after a long time not having the chance to play around with art. And this is my signature at the back of the card, copyright controlled..... *wink*
Last Monday, I thought of updating my blog, for the teacher's day entry, soon as I've finished doing the orders that came from ANZ, but then I got a sad news from hubby's family. One of his cousin, a former teacher, passed away. Datin Hajjah Aminah Zakaria passed away at the age of 49 after bravely fighting with the final stage cancer. May her soul rest in peace. Al-Fatihah.
I am not going to write much today. My list-to-do is still very long. So I will go straight to the recipe to share. Made these brownies for Syahmi's teachers. Besides the brownies, I had packed a chocolate chip muffin as well in the box. Thank you to all the teachers who had kindly taught my son. May all of you be blessed....

BEST BROWNIES

(Note : Please double the recipe for tray sized 10" x 10")
Ingredients :
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla essence
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
Frosting : (I didn't do this)
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar
Directions :
1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease and flour an 8 inch square pan.
3. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.
4. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
5. Spread batter into prepared pan.
6. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
To Make Frosting:
Combine 3 tablespoons butter, 3 t. ablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.
