Mee Rebus (Yatie)

Ingredients :

1kg yellow noodles (blanched for 2 minutes and drained the water)
2 cups bean sprouts (cleaned, blanched for 30 seconds and drained the water)
4 hard boiled eggs (peel and halved)
4 pieces bean curds (fry till golden brown, cooled and slice thin)
fresh red chillie and fresh green chillie (sliced)
crispy fried onion
Calamansi (washed and halved)
scallion and cilantro - chopped

Ingredients for gravy:

500g topside beef (slice thinly and cut to small pieces)
4 medium sweet potatoes (peel, cut to small chunks. Boil till soft then mash)
4 tablespoons chillie paste *
10 shallots *
5 cloves garlic *
2 stalks lemongrass *
3 tablespoon dried shrimps (washed and soak) *
2 tablespoons meat curry powder *
1 cup water *
2 cups thick coconut milk
2 pieces dried tamarind skin
2 stalks lemongrass - bruised
salt and sugar to taste
cooking oil
4 cups water (amount of water depends on how thick you'd like the gravy to be)

Method :

1. Blend the ingredients marked (*) to form thick paste.
2. Heat oil in a pot and add the thick paste. Fry till fragrant.
3. Add in 2 stalks of lemongrass (bruised) and meat. Stir. Add 2 cups of water. Let it boil.
4. Once boiling, add in the mashed sweet potatoes and mix well. Add in another 2 cups of water.
5. Add salt and sugar to taste. By right, the taste of this gravy should be slightly sweet. Let it boil.
6. Pour in the coconut milk. Add dried tamarind skin and continue cooking till the gravy is slightly thickened.
7. Remove from heat and ready to serve.

To serve :

1. Place a handful of blanced yellow noodles into a bowl. Top it with sliced fried bean curds and hard boiled eggs.
2. Pour the gravy on top of the noodle.
3. Add blanced bean sprouts on top.
4. Sprinkle with some scallion, cilantro, crispy fried onion, fresh red and green chillies. Last but not least, the halved calamansi.
5. Enjoy!

This is my mom's serving... glad she enjoyed it...
