Kimchi Bokkeumbap


KIMCHI FRIED RICE (KIMCHI BOKKEUMBAP)

Ingredients :

2 eggs
3 dashes black pepper
salt to taste
2 cloves garlic - minced
1 tablespoon chillie paste
1/2 Holland onion - finely diced
1 teaspoon sweet soy sauce or to taste
1/4 teaspoon sesame oil
1/2 cup kimchi - cut into small pieces + 1 tablespoon kimchi juice
10 prawns - peel and devein
2 cups white rice

cooking oil

To garnish :

1 stalk scallion - cut into small rounds
1/2 fresh red chillie - slice

Method :

1. Beat eggs with black pepper and salt and make some scrambled eggs. Remove from heat and set aside.
2. Using the same wok, heat a bit of oil and add in garlic. Fry till fragrant and add in chillie paste.Stir for another 3 minutes then add in diced onion.
3. Once the onion are soft, add in soy sauce, sesame oil and salt to taste.
4. Add in kimchi.
5. Finally add in rice and scrambled eggs. Stir to mix.
6. Before serving, garnish with scallions and sliced chillie.


NASI GORENG KIMCHI

Bahan-bahan :

2 biji telur
sedikit serbuk lada sulah
garam secukup rasa
2 biji bawang putih - dicincang
1 sudu besar cili kisar
1/2 biji bawang Holland - didadu
1 sudu kecil kicap manis
1/4 sudu kecil minyak bijan
1/2 cawan kimchi - dihiris + 1 sudu besar jus kimchi
10 ekor udang - dikupas kulit
2 cawan nasi

minyak untuk memasak

Untuk hiasan :

daun bawang - dihiris
hirisan cili merah

Kaedah :

1. Pukul telur bersama lada sulah dan garam. Panaskan minyak dan buat telur hancur. Ketepikan.
2. Menggunakan kuali yang sama, panaskan minyak dan masukkan bawang putih. Goreng hingga wangi dan masukkan cili kisar. Goreng sampai garing dan masukkan pula bawang yang didadu. Kacau hingga bawang lembut.
3. Perisakan dengan kicap manis, minyak bijan dan garam secukup rasa.
4. Masukkan kimchi. Kacau.
5. Akhir sekali, masukkan nasi dan telur hancur. Kacau hingga rata.
6. Sebelum dihidangkan, taburkan sedikit daun bawang dan hirisan cili merah.

Apam Kacang Merah

APAM KACANG MERAH

Ingredients :

1 cup red bean - boiled till soft and remove the water (I used the readymade ones)
200ml water
2 cups rice flour (I used Teratai brand)
1 cup flour
1 teaspoon baking powder
1 cup sugar
1 teaspoon instant dried yeast (I used Mauripan)
200ml coconut milk
Red food coloring

freshly grated coconut + salt to taste

Method :

1. Blend the red beans with water.
2. Sift rice flour, flour and baking powder into a bowl.Add sugar and yeast.Stir using a whisk.
3. Pour in coconut milk, red bean mixture and food coloring. Stir using a whisk till well mixed. Cover and leave to ferment for 1 to 2 hours.
4. Grease the mould with a bit of oil. Spoon the mixture into the prepared mould and leave to rest for 5 minutes.
5. Steam on moderate heat for 15 to 20 minutes.
6. Remove from mould and serve with freshly grated coconut.


Bahasa Malaysia Version
APAM KACANG MERAH

Bahan-bahan:

1 cawan kacang merah-sudah direbus dan toskan
1 cawan gula pasir
2 cawan tepung beras
1 cawan tepung gandum
200ml air
200ml santan kotak kara
1 sudu teh baking powder
1 sudu teh yis- bancuh dngn sedikit air suam dulu pun boleh
sedikit pewarna merah

Cara-Caranya :

- Kisar kacang merah yg telah direbus bersama air.
- Sementara itu satukan kesemua bahan lain dan gaul hingga sebati.
- Masukkan sekali kcng merah kisar dan gaul sebati. Perap adunan selama 1-2 jam.
- Sapukan acuan dengan sedikit minyak.
- Tuangkan adunan kedlm acuan dan biarkan 5 minit barulah di kukus.
- Kukus selama 15-20 minit menggunakan api sederhana kuat.
- Angkat dan bolehlah dihidangkan bersama kelapa parut putih. Makan gitew je pun sedap.


Readymade beans... untuk orang yang kurang rajin macam mama! Yang rajin, jangan ikut. Haha...

Kuih Cara Manis

I can never be a teacher. I can never teach. And I don't think I have the potential to be a good teacher either. I admit it myself.. without any pressure from anybody ... hahaha...dah macam bunyi kena interrogate pulak ek? :P

My neighbour and I, sometimes played 'masak-masak' at her house. She will ask me to drop by her house, normally on weekends to do stuffs. But whenever I tried to 'play teacher' infront of someone, whatever I did, won't turn out how it turned out when I was doing it alone at home. Luckily my neighbour knows me well and understands my situation. Where else others may think... well mama is not sincere to teach us. How come, when she did hers, all came out nice. She must be hiding something and doesn't want to share it with us.... :(

Frankly speaking, if I want to hide something from anybody, I will not waste my time sharing it with others. It will be just a waste of time and energy to me and also to the other party.

So to conclude, I think I am not meant to be a teacher. Thank you! Hahaha...poyo punya statement...

KUIH CARA MANIS

Ingredients :

1 1/4 cup flour
1 tablespoon custard powder
1 tablespoon margarine (I used Planta)
1 egg
1 cup pandan juice (I mixed 1 cup water + pandan essence + green food coloring)
1 1/2 cup coconut milk
a pinch of salt (or to taste)
green food coloring

enough sugar for filling
a bit of oil for greasing

Method :

1. In a big bowl, sift flour and custard powder. Set aside.
2. In a smaller bowl, add egg, pandan juice, coconut milk, salt and food coloring. Mix using a whisk. Pour into the dry ingredients. Stir using a whisk.
3. Pour the bater into a blender and add margarine. Turn on the blender for about 2 minutes till a smooth bater is formed.
4. Heat the kuih cara mould on the stove on slow fire. Grease with a bit of oil.
5. Spoon some mixture into each hole. Leave for about 40 seconds before putting some sugar onto the middle of the batter.
6. Cover the mould and leave to cook for about 2 to 3 minutes or till done. 7. Repeat the process till the bater is finished.


BAHASA MALAYSIA VERSION/ORIGINAL VERSION

CARA MANIS
Resepi : CheAnn @ Dari Duniaku...

Bahan-bahan

1 cwn tepung gandum
1 sudu makan tepung kastard
1 sudu kecil majerin/butter
1 biji telur
1 cawan air pandan
1 1/2 cawan santan
scubit garam
sedikit pewarna hijau utk menaikkan seri kaler hijau
Gula utk masukkan dalam kuih
sedikit minyak utk oles kat acuan kuih cara

Cara-cara

1. Campur semua bahan kat atas kecuali pewarna & gula- sy blender je supaya adunan halus mulus
2. Panaskan acuan dan oles dengan minyak
3. Masukkan adunan ke setiap lubang acuan, biar seketika- dalam 40 saat utk lapisan tepi dah masak baru massukkan gula. Kalau terus masukkan gula nanti kuih mudah pecah..gula mudah sememeh keluar.
4. Tutup acuan dan biarkan dalam2-3 minit...atau hingga masak
5. Angkat dan ulangi proces membakar hingga adunan siap

Note: adunan memang nampak cair tapi jgn bimbang...bila dah masak ia akan lembut gebusss gitu.

Crunchy Currypuffs Karipap Sabah

Actually I have doubt to post this entry...
Why?
I am not sure if there is such thing as Karipap Sabah.
Why?
I had asked a friend of mine, Vera who is from Sabah, about this particular kuih and she wasn't too sure about it. Then I did some 'research'.... research okay... tak mau kalah tu..hahaha... on the internet. Still I am unsure of the existance of Karipap Sabah.

Anyway, I will still post the recipe here......


CRISPY CURRYPUFF SKIN

Ingredients :

250g flour
1/4 cup cooking oil (I used Naturel Corn Oil)
1 tablespoon margarine (I used Planta)
1/2 teaspoon salt (or to taste)
1/2 cup water

Currypuff Filling

Method :

1. Heat oil, margarine and salt.
2. Pour into the flour. Stir using a spoon. Be careful with the hot oil.
3. Add in water a little at a time and keep kneading till a soft dough is formed.
4. Divide into 10 portions and make into small balls. Rest for 10 minutes.
5. Then shape. Refer to the step by step photo.


6. Fry till golden brown.

Cheezy Cheese Balls

Who is the greediest lady on earth?
Me! Me!.. tergedik gedik ngaku tuh! Hehehehe....


Spent the whole morning, re-arranging all my recipe printouts. If I really file them up nicely, I am very sure I have at least 5 fat files! But how many of those recipes printed that I've tried out? I am very sure, the answer will be... not even one thin file! Hahahaha....


Well, there's a saying in Bahasa Malaysia... sediakan payung sebelum hujan (get an umbrella ready before it rains). So in my case, get those recipes ready before your mood vanishes! Haha.. you will never know when you will be in mood to do stuffs in the kitchen!

CHEEZY CHEESE BALLS

Ingredients :

3 medium sized potatoes
enough flour
pepper
salt to taste
cheddar cheese (I used sliced cheese)

Egg white
Breadcrumbs


Method :

1. Clean potatoes, diced and boil with a bit of salt till soft.
2. Pour the potatoes into a colander and place the potatoes in a bowl. Mashed those potatoes with pepper and salt if necessary.
3. Add in flour, a little at a time till a soft dough is form and till it is easy to handle.
4. Take a bit of the dough (the size of a pingpong ball) and flatten it on your hand, place a small piece of cheese in the middle. Cover with dough and make into a ball. Repeat till all the dough is done.
5.Dip the potato balls into the egg white. Then coat it with breadcrumbs.
6.Heat the wok with enough oil to fry. Fry till golden brown. Place the cheese balls onto a kitchen towel. Ready to serve.

At 5, went to Sae's place to 'main pondok-pondok' again... We made 2 things today.
Came home almost Maghrib, do all the neccessary things and now, I am infront of my beloved computer...

Easy Banana Muffins

That sentence spells... danger! danger! danger!Hahaha...

If the sentence ends up with "cupboard", then my family members are the chosen victim! It is a normal thing, when you tidy your cupboard once in a blue moon (mine perhaps, blue, green, yellow and all the other colors you could think of!), you tend to find lots of 'treasures'. I will snap the photos and whatsapp it to the Family Group and we will have a good laugh... hahahaha....down memory lane....

BUT....

If that sentence finishes with 'email', that means, there is a big possibility I ended up buying something from the online shops. Though it is not THAT often this situation occurs, but the possibility is still there!

If not with the online shop, then it will definately ends up with me printing or copying something from the net and into the kitchen I go...IF.. I am in mood to do some experiments in the kitchen.

And yesterday, it was not the shopping, but the experimenting that took place... phew... I am so relieved I didn't do any online shopping. It's the waiting for the courier services that actually tense me up! :)

As I was saying... When I was clearing my email, I came across email from Allrecipes featuring The 25 New Recipes of 2013. I scrolled down and decided to click on the Easy Banana Muffin. Since I have some over riped bananas in the fridge, I thought, why not try this one out and I think I've made the right decision...


EASY BANANA MUFFINS

Ingredients :

3/4 cup all-purpose flour (I used 1 1/2 cups)
3/4 cup whole wheat flour (I omit this because I don't have the flour)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 bananas, mashed (I used 3 because that was all I had)
1/2 cup castor sugar
1/4 cup brown sugar
1/3 cup canola oil (I used Naturel Corn Oil)
1 egg
Some chocolate chips (I added)
Vanilla essence (I added)

Method :

1. Preheat oven to 170 C. Arrange the papercups on a baking tray.
2. Sift the dry ingredients into a bowl. I sifted trice. Set aside.
3. Mix bananas, white and brown sugar, canola oil, vanilla essence and egg together in a separate large bowl.
4. Fold in the dry ingredients into the banana mixture until just incorporated. Scoop batter into prepared muffin cups, 3/4 full.
5. Sprinkle with some chocolate chips.
6. Bake in the preheated oven until muffins spring back when lightly tapped in the middle, 20 to 25 minutes.

Jackfruit in Spicy and Hot Coconut Milk Gravy


Hmmm, did I write, BRUNCH in my previous entry? Oh yes I did and indeed I had just brunch. But not for my mom. She had her breakfast in the morning and she needs her lunch. So yours trully cooked lunch for dear mom. The original plan was to cook Chicken Rice with a bit of cheating here and there, but I guess, since today is Friday, cheating is not permissable.... hahaha.. as if other days are halal to cheat! Duh!

I took quite a bit of things out of the freezer, still not knowing what to cook. It was at 11.30am when I finally made up my mind. I didn't follow any recipes in particular. I just chucked in whatever I feel like it's right to chuck in and which ever way I think is right to prepare these dishes! Hahaha... So, if you feel like trying out this recipe, please go ahead, AT YOUR OWN RISK. Hahahaha... ni yang buat orang pikir 40 kali nak cuba ni... ahahaha...

..tu dia eh, ambil gambar dalam periuk terus. Tak de prop tak de pinggan cantik bagai! Tak reti! Hahaha...

JACKFRUIT IN SPICY AND HOT COCONUT MILK GRAVY

Ingredients :

300g unripe jack fruit - cleaned and cut to small pieces
11 bird eye chille - depends on how hot you want your gravy to be
5 shallots
1 inch ginger
1/2 inch fresh turmeric
100g tender meat
1 beef cube - I used maggi brand
1 stalk lemon grass - bruised
1 piece turmeric leaf - shred
thin coconut milk
thick coconut milk
dried tamarind skin
water
salt to taste

Method :

1. Place the jackfruits in a pot. Add water and bring to boil till jackfruit is tender. Put through a strainer and set aside.
2. Blend finely, bird-eye chillies, shallots, ginger, fresh turmeric with 1/2 cup of water. Set aside.
3. In a pot, place the meat and add water. Bring to boil till the meat is tender.
4. Pour the finely blended ingredients and thin coconut milk. Add in the beef cube and lemon grass. Stir and let the gravy boil. When the liquid is slightly reduced, add in the thick coconut milk, the jackfruits, shredded turmeric leaf and tamarind skin. Add salt to taste.
5. Let it simmer for a few more minutes, stir once in a while.
6. Remove from heat and ready to serve.

Banana Fritters

BANANA FRITTERS

Ingredients :

3 ripe bananas - mashed
1 cup flour
1 tablespoon milk powder
1/2 teaspoon baking powder
2 tablespoons sugar (depends on the sweetness of your bananas)
1/4 teaspoon salt
enough oil for frying


Method :

1. Sift flour and baking powder. Set aside.
2. In a bigger bowl, add mashed banana, sugar, salt and milk powder. Mix well.
3. Add the dry ingredients into the banana bater. Mixture must neither be too soft nor too hard.
4. Heat oil and scoop a bit of mixture using the edge of your fingers and drop it gently into the oil.
5. Fry till golden brown.

New product from McD? Hahaha... I guess not!
